
Silky noodles swimming in a flavoursome broth. Poached salmon that melts away off your fork after just one pan to clean following its creation. Crafted in under 15 minutes, serves two.

Ingredients:
- 2 fillets of salmon (150g each or close to)
- 1/2 head of broccoli florets
- 2 serves of rice noodles
- The broth
- 2/3 cup of water
- 2 cloves garlic (1 of you are shy)
- 1/2 thumb peeled and grated ginger
- 1 chicken stock cube
- 1 tbsp soy sauce
- 1 tbsp oyster sauce
- small nob of butter
- 1tsp turmeric
- squeeze of lemon (to your liking, you cant go too wrong if you don’t venture past the one lemon)

Method
- Melt the nob of butter into the pan (ensure this pan is of medium depth and has a lid handy) and let the garlic and ginger cook on a medium heat for 1 minute. Add the remaining ingredients from the broth list and bring to a gentle boil on medium-high heat.
- Add the salmon and cover to simmer for 4 minutes.
- Turn the salmon and add the rice noodles. Cover and let simmer another 3 minutes.
- Turn the salmon again and add the broccoli florets. Cover for the last three minutes whilst you get your garnish and bowls at the ready.
- The salmon should now have been in its steamy, golden bath ten minutes and can be taken out and placed in your bowl, follow with a portion of broccoli and rice noodles, pour in some broth and garnish with sesame seeds or a bit of coriander (Vietnamese mint of Thai basil also works, think oriental and at your local grocer. )
