Mexi-Mince Bowls

This is a boss dinner option for the following reasons:

  • Mince can be made in bulk and stored away in the freezer to save you time later.
  • Nachos require no time to prep unlike rice or potato
  • There is just far too much deliciousness going on and an unbearabley good melody of textures. The crunch of a corn chip, creaminess of avocado and yogurt, chewiness of mince and melt in your mouth sensation of parmesan.
  • So nutrient dense! Iron, zinc, b vitamins, omega 3s, tyrosine (think thyroid health) and probiotics. Beyond nourishing!

Ingredients (to make 6-8 meals, halve or double ingredients as you wish):

  • 1kg higher welfare beef mince
  • 1 tin chopped tomato
  • 500g passata
  • 2 tbsp stock powder
  • 4 tbsp Mexican seasoning
  • garlic optional, I have left out as I’m breastfeeding and it tends to give my baby wind
  • The toppings (per single bowl):
  • 1/4 avocado
  • small handful of corn chips
  • 1tbsp yogurt
  • 1 tbsp parmesan
  • salt and pepper to taste

Method:

  • In a large pan, heat the mince on medium heat until browned. Add the tinned tomato, passata, stock and herbs. Allow to simmer for 10 or so minutes on a lower heat.
  • Spoon out desired amount into a bowl and add the delicious embellishments of corn chips, avocado, yogurt and parmesan.
  • Store the rest in the fridge (up to 3 days) or the freezer (up to three months).

Little tip: If you have a blender, try blending cooked pumpkin, cauliflower, zucchini etc and adding it to the mince mix, it is a fabulous way to hide vegetables from little ones with strong opinions.
